Ingredients

  • 4 large eggs

  • 2 cups sugar

  • 1 (16 oz) can pumpkin

  • 1 tsp vanilla extract

  • 1 1/4 cups vegetable oil

  • 3 cups flour

  • 2 tsp baking soda

  • 2 tsp baking powder

  • 2 tsp cinnamon

  • 1 tsp salt

  • 12 oz semisweet chocolate chips

Instructions
Preheat oven to 400°F. Mix eggs, sugar, pumpkin, vanilla, and oil until smooth. Combine dry ingredients separately, then add to the pumpkin mixture. Stir in chocolate chips. Grease muffin tin and fill 3/4 full with batter. Optionally, sprinkle mini chocolate chips and demerara sugar on top. Bake for 15-20 minutes. Makes approx. 2 dozen muffins.
